That’s how Theodora Konstantopoulou describes the experience that completely changed the way she looked at her life.
After a life-threatening anaphylactic reaction and a new allergy diagnosis, Theodora suddenly found herself searching for foods she could safely eat and trust. That experience changed more than what she put in her grocery cart. It changed her perspective on how she wanted to live.
Eventually, it also led her to create Nude Granola — a simple, organic granola made with just a handful of real ingredients and free from peanuts, tree nuts, sesame, gluten, seed oils and preservatives.
Her mission is simple: prove that food doesn’t need a long list of ingredients to be both delicious and nourishing.

What was your “aha” moment?
At 41, I almost died — and it was the greatest pivot ever.
It changed my entire perspective on life and how I want to live it.
How old were you when you made this pivot?

Tell us about Nude Granola.
Nude Granola was created after my life-threatening anaphylaxis experience and diagnosis left me searching for safe foods I could trust.
It’s a simple, organic granola made with just a handful of real ingredients. It’s peanut-free, tree nut-free, sesame-free, gluten-free, and free from seed oils and preservatives.
My mission is to prove that simple food can be both delicious and nourishing while helping people feel confident about what’s in their breakfast bowl.
Finding Strength in the Unexpected
What has been the most challenging part of your midlife transformation?
Navigating unexpected changes and realizing that life doesn’t always unfold according to plan.
From health challenges and financial stress to watching my children grow more independent, I’ve had to learn how to let go of certainty and embrace resilience.
At the same time, those challenges have pushed me to grow, reinvent myself and discover strengths I didn’t know I had.
What prepared you for this pivot?
My greatest preparation wasn’t one specific skill. It was a combination of resilience, adaptability and a willingness to keep learning.
Years of being passionate about wellness, raising a family and navigating life’s challenges taught me how to connect with people, solve problems and stay committed to a vision — even when things don’t seem like they’re working out.
What would you tell yourself right before making this pivot?
Be less afraid.
Believe you can do things before others believe you can. What other people think of you really isn’t any of your business.
Just do you.

What’s your favorite thing about this stage of life that you never expected?
The confidence boost — it’s huge. ❤️
What have you stopped caring about?
I don’t mind saying no.
What does success look like now compared with your 20s and 30s?
In my 20s and 30s, success meant accomplishing goals and proving I was capable.
In midlife, success feels much more personal.
It’s waking up excited about the work I’m doing, having the courage to start something new, maintaining my health, being present for my family and knowing that my life reflects what matters most to me.
I’m striving for alignment, and that’s been one of the greatest gifts for me.

What’s on your bucket list?
There’s a lot!
For Nude Granola, I want to see it on store shelves and become a trusted brand for families looking for simple, allergy-friendly food.
For my family, I want to watch my children grow into happy, confident adults and one day enjoy being a grandmother.
I want to stay strong, active and independent for decades to come, return to South Africa and share my roots and childhood memories with my family — and someday write a book about wellness, resilience and reinventing yourself in midlife.
Who has been your biggest source of inspiration?
My mom.
How do you celebrate the small wins?
Mani-pedi and a massage.

What advice would you give another woman considering her own midlife pivot?
Go for it.
Theodora’s pivot started with a moment she never would have chosen. But what came after was a choice.
To be less afraid. To trust herself. To rethink what success looks like. And to create something inspired by an experience that completely changed her own life.
